Program Overview and Job Summary

The Food Safety and Production Coordinator is a full-time position that will work closely with the Chef, and occasionally with the Operations Manager, to ensure that all clients are fed healthy and nutritious meals, while maintaining the highest level of safety and sanitation. Creativity, ability to follow standard operating procedures, and the capability of asking questions and seeking solutions is a must.

Types of programming and meal service:

  • Education Programs: From mid-August through Memorial Day, Education Programs are our most regular type of programming. Clients include visiting schools, generally aged 3rd grade through high school with accompanying parents and teachers, staying for 3 days and two nights while studying various curriculums. Meal service includes two hot breakfasts and dinners, bag lunches, various snacks, and a dessert in conjunction with evening programming. Spring and fall programs accommodate a higher volume of programs than the winter season, and additional part time staff are brought in to assist during these periods. Occasionally groups will follow the same meal plan but stay for a shorter or longer session and programs may be here during the school week or over the weekend.
  • Summer Camp: From Memorial Day through mid-August, Summer Camp is our most varied and highest volume program. Clients consist of day and overnight campers aged 5 to 17 and meal service is provided for all residential staff members. Meal sizes can vary from 60 (staff only) to 150 (overnight camp + staff) and topping out at 200 (Thursday BBQ lunch with 2 separate day camps + staff + administrators.) While a basic meal plan is outlined, each individual week session during the 12-week duration of camp has its own programming format (Adventure Camp, Space Camp, Deluxe Camp, etc.) which brings subtle variations in meal service execution. Most shifts will be worked by a team of kitchen staff members.
  • Adult Retreats: The least regular type of programming is catering for Adult Retreats. Ranging from coffee & tea service for meetings held in the KSS administrative building to large scale overnight programs, clients choose a meal service from a multi-tiered menu with various pricing options which can be customized to the clients’ preferences.
  • Day Retreats: KSS averages 1 Saturday a month during the school year hosting a group on campus for the day and provide one or two meals, often in the form of a hot lunch. These groups are often 30-60 people. (Program examples are Girls in STEM, Girl Scouts, a school from Denver up for a ski day at a local resort, or community volunteers);
  • Staff Meals: Once a month during the school year kitchen staff provides a hot meal for our administrative team and instructors to eat as a community in the dining hall. These meals, much like Staff Meals during Summer Camp are the best places for kitchen members to flex creativity and experiment.

Essential Duties and Responsibilities

  • Prepare, serve, and clean up meal service for groups of 20-200; clients may include: students, campers, chaperones, adult group retreats, as well as donors, board members, and staff; depending on size or type of programming, the position may work independently or as a team;
  • Ensure a high level of health and safety, cleanliness, and food hygiene and ensure that safe working practices are followed; hold other staff members accountable for these practices;
  • Learn and execute established work practices, methods, and procedures; work with Chef to train seasonal staff;
  • Work with Chef on ordering, organization, scheduling, invoice coding, hiring of seasonal staff, semi-annual review and revision of menu, recipes, daily & periodic task checklists; stand in for Chef in the event of illness, vacation, or other absence;
  • Ensure food storage areas accessible to staff are maintained with adequate and quality inventory;
  • Possess an attention to detail and an ability to be flexible and adaptable in terms of a regularly evolving program schedule;
  • During high volume On The Road or Adventure Programs, the position may be required to assist in off-site facility or camping-based food packing and preparation roles;
  • To adhere to existing working practices, methods, procedures, undertake relevant training and development activities and to respond positively to new and alternative systems;
  • Carry out any other reasonable duties and responsibilities within the overall function, commensurate with the grading and level of responsibilities of the position.

Knowledge, Skills, and Abilities – Minimum Requirements

  • Strong work ethic and will work until the job is complete;
  • Motivation to contribute positively to the KSS at-large community;
  • Interpret a variety of instructions furnished in written or oral form;
  • Multi-task efficiently while managing a high-volume workload in a fast-paced, changing environment;
  • Superior customer service skills with the ability to be creative and think ‘outside the box’;
  • Strong command of communication, writing, and organizational skills;
  • Effectively interact with people of diverse backgrounds and different levels of experience;
  • Ability to work in a busy environment with many distractions.

Required Education, Experience, and Certifications

  • Five or more years of relevant food service experience;
  • Current State Food Safety Manager certification or willingness to obtain through KSS upon hiring;
  • Current First Aid and CPR certification or ability to obtain before the first day of employment;
  • Excellent driving record and a valid driver’s license;
  • Must be able to successfully pass a comprehensive background check.

Travel Expectations

There may be some infrequent travel in Colorado required.

The work environment characteristics described here are representative of those that must be met by an employee while performing the essential functions of this job. This position requires the employee to work in close contact with his/her teammates. The noise level in the work environment is usually moderate, but varies seasonally due to programs and staffing on campus.
